Best Bacon Brioche Breakfast Sandwich

INGREDIENTS:
Calabrian chilis
Dijon Mustard
Bacon (I prefer using Rugby Scott bacon)
2 eggs (Vital Farms, always)
Arugula
Pickled Onions
Goat Cheese
Brioche bun
Fig Jam
RECIPE:
Pan fry your bacon until crispy
Soft-scramble 2 eggs
Butter the same pan you scrambled your eggs and lightly toast your brioche buns
While cooling, mix 1 tsp of the oil from the jar of Calabrian chilis with 1/3 cup of Dijon mustard
Spread chili-mustard on bottom bun
Squeeze lemon onto arugula, toss with salt and pepper
Spread fig jam on the top bun
Layer scrambled eggs
Followed by:
Bacon
Arugula
Goat cheese
Pickled Onion
And enjoy!
